Best Sous Vide Mushroom Recipe

Sous vide mushrooms offer even cooking to ensure that all are heated to a perfect internal temperature.
Mushrooms are a very versatile side dish that can be used to top all sorts of meals, from pastas, to burgers, steaks, and everything in between. If you are looking for a way to cook a large batch of mushrooms all at once, give sous vide a try. Why? When you sous vide your favorite vegetable, more flavor comes out of whatever kind of vegetable you are cooking.
The mushrooms do not take a lot of prep time to work with, as you are simply going to be trimming the stems off before getting ready to sous vide. Because of how lightweight mushrooms are, you may have to use sous vide weights to keep them submerged in the bath water.
Once the mushrooms are cooked, you can store them in the fridge for future use after they have cooled down in a bowl of ice.
Sous Vide Mushroom Ingredients
6 ounces of your preferred mushroom type
1 tablespoon of olive oil
1 tablespoon of butter
2 teaspoons of fresh thyme
2 teaspoons of fresh rosemary
1 teaspoon of finely chopped garlic
How to Sous Vide Mushrooms
1. Warm the water to an 185 temperature
2. Once the mushrooms have been washed and trimmed, place them inside of your vacuum bag. Then, add the above ingredients into the vacuum bag as well. By vacuum sealing the mushrooms, this will allow them to be submerged easier in the water.
3. After the water reaches the internal temperature of 185, place the bags of mushrooms in the sous vide bath for about 30-35 minutes.
4. Remove the mushrooms from the sous vide and set aside.
5. Fill a bowl with ice and place the bags in them so the mushrooms have an opportunity to cool down.
6. If you are looking to eat these mushrooms immediately, then melt butter in a pan that has been warm to a medium heat. Open up the vacuum sealed bags and add olive oil. Bring to a boil. Once the sauce has thickened, reduce the heat on the pan. Then, add the mushrooms in until they are covered in the sauce you just made.

Sous Vide Green Beans

Sous Vide is an awesome French cooking technique that can be used to cook nearly everything to a perfect internal temperature. One of the best things you can sous vide are vegetables. This is because when you sous vide them, the flavor is even more pronounced. That is the same case when you sous vide green beans.
If you have ever tried to cook green beans in traditional methods, you know how hard they can be. When you leave them boiling too long, they become much tougher and stringy and no one wants that.
Types of Sous Vide Green Beans
There are two different ways you can sous vide green beans. One way is to get them crisper. To do that, you will leave the green beans in the water for 30 minutes at a water temperature of 185 degrees Fahrenheit. If you like the green beans softer, cook them for 45 minutes at the same temperature.

Sous Vide Green Bean Ingredients
1 teaspoon of finely chopped garlic
1 teaspoon of rosemary
Add salt and pepper to your liking
How to Sous Vide Green Beans
1. Fill your cooking vessel with water and attach your sous vide device to the pot.
2. Set the temperature to 185 degrees Fahrenheit.
3. Wash your green beans and trim off the ends of them.
4. Add your green beans to a vacuum sealed bag and seal them. If you do not have a vacuum sealer, this can be accomplished by placing all of the beans in a ziplock bag.
5. To get the same effect, we will use the “water displacement” method. Leave one corner of the bag open after sealing the rest and place the ziploc bag inside the water slowly.
6. Make sure the bag is fully submerged in the water. To do this, you will need to find something to keep the green beans from floating up, or keep them manually submerged with a cooking utensil.
7. Cook between 30-45 minutes depending on what kind of texture you want on the beans.
8. If you are not planning on eating the green beans right away, place them in a bowl of ice for 10 minutes before storing them in the fridge.
9. Otherwise, warm up a bit of butter in a pan over medium heat, add the garlic, followed by the green beans with salt and pepper. Stir for just around 30 seconds and serve with your favorite dish.
